Street Corn Salad

Ingredients

  • 1 can of corn, drained
  • 30g butter
  • 1 tbsp olive oil
  • 1/3 cup (100g) mayonnaise
  • 1 1/2 tbsp sour cream
  • 65g Coles Danish Fetta, finely crumbled
  • 3 limes, zest finely grated, juiced
  • 1/2 cup coriander leaves, finely chopped
  • 3 spring onions, thinly sliced
  • 1/4 tsp smoked paprika

Instructions

  1. Warm a pan on medium heat. Add butter and allow to melt and caramelise slightly. Add corn and fry until golden - tossing occasionally.
  2. In a small serving bowl, whisk mayonnaise, sour cream, fetta, lime zest and lime juice. Season with salt and pepper.
  3. Add the corn kernels, coriander and paprika into the mixture and stir.
  4. Top with spring onions and serve at room temperature.
