Ingredients

1 can of corn, drained

30g butter

1 tbsp olive oil

1/3 cup (100g) mayonnaise

1 1/2 tbsp sour cream

65g Coles Danish Fetta, finely crumbled

3 limes, zest finely grated, juiced

1/2 cup coriander leaves, finely chopped

3 spring onions, thinly sliced

1/4 tsp smoked paprika
Instructions
- Warm a pan on medium heat. Add butter and allow to melt and caramelise slightly. Add corn and fry until golden - tossing occasionally.
- In a small serving bowl, whisk mayonnaise, sour cream, fetta, lime zest and lime juice. Season with salt and pepper.
- Add the corn kernels, coriander and paprika into the mixture and stir.
- Top with spring onions and serve at room temperature.
