2 eggs

½ cup shredded tasty cheese

Roughly 2 tsp honey or hot honey

1–2 tsp chilli oil or chilli crisp (to taste)

Salt and pepper

Chopped chives
Instructions
- Place a non-stick frying pan over medium–low heat.
- Drizzle honey (or hot honey) into the pan, spreading it slightly across the base.
- Sprinkle a generous layer of shredded mozzarella directly on top of the honey.
- Crack 2–3 eggs over the cheese. Season with salt and pepper, then drizzle chilli oil over the eggs.
- Cover with a lid and cook for about 2–3 minutes, until the eggs are mostly set and the cheese underneath has caramelised.
- Remove the lid add the chilli oil or chilli crisp and spring onion to taste
- Turn off the heat and slide onto a plate and serve.
