Baked Tomato Burrata Dip

Ingredients

  • 300g cherry tomatoes (mixed colours if possible)
  • Olive oil
  • Salt, pepper, to taste
  • 1 tbs Paprika
  • 2 tsp Garlic powder
  • 2 tsp Dried parsley
  • 2 tps Dried oregano
  • 1 burrata or stracciatella
  • Fresh basil
  • Parmesan
  • 1 Baguette

Instructions

  1. 1. Add cherry tomatoes to a baking dish and drizzle generously with olive oil (enough to coat the bottom of your dish).
  2. 2. Season with salt, pepper, red pepper flakes, garlic, parsley, and oregano.
  3. 3. Bake at 220ºC for 20-30 mins until tomatoes burst (you can gently smash them halfway if they need some assistance in the ‘bursting’ process).
  4. 4. While that bakes, slice a French bread baguette, drizzle with olive oil, and toast 5–7 mins until golden.
  5. 5. Once you’re ready to serve, top the dip with parmesan, fresh basil, and burrata. Stir it all together and serve hot. Dip. Scoop. Repeat. Enjoy!
