Ingredients

300g cherry tomatoes (mixed colours if possible)

Olive oil

Salt, pepper, to taste

1 tbs Paprika

2 tsp Garlic powder

2 tsp Dried parsley

2 tps Dried oregano
-
1 burrata or stracciatella
-
Fresh basil
-
Parmesan

1 Baguette
Instructions
- 1. Add cherry tomatoes to a baking dish and drizzle generously with olive oil (enough to coat the bottom of your dish).
- 2. Season with salt, pepper, red pepper flakes, garlic, parsley, and oregano.
- 3. Bake at 220ºC for 20-30 mins until tomatoes burst (you can gently smash them halfway if they need some assistance in the ‘bursting’ process).
- 4. While that bakes, slice a French bread baguette, drizzle with olive oil, and toast 5–7 mins until golden.
- 5. Once you’re ready to serve, top the dip with parmesan, fresh basil, and burrata. Stir it all together and serve hot. Dip. Scoop. Repeat. Enjoy!
