Ingredients

150g salmon

1 cup cherry tomatoes, quartered

1/4 cup chopped red capsicum

1/4 cup chopped red onion

1 tbs minced garlic

2 tbsp pitted kalamata olives

2 cups crumbled feta cheese

Salt and pepper, to taste

1/4 tsp oregano
-
1/4 tsp red chili flakes

1 tbsp extra virgin olive oil

Chopped fresh basil to garnish
Instructions
- Preheat oven to 200°c. Pat the salmon dry with some paper towel.
- In an oven-safe dish, place the cherry tomatoes, capsicum, red onions, feta cheese, kalamata olives, garlic, half the salt, and half the oregano. Pour the olive oil on top, and toss until well combined.
- Place the salmon in the middle of the baking dish surrounded by all the vegetables. Add the remaining oregano and crushed red pepper on top of the salmon. Drizzle more olive oil if desired.
- Bake in the preheated oven for approx 15 minutes, until the tomatoes soften and the salmon is cooked through.
- Add fresh basil leaves and serve with a side of your choice, if desired.
